JAMES BEARD FOUNDATION
In 2019, the James Beard Foundation partnered with Diana Edelman to create a Las Vegas vegan dinner at the world-famous James Beard House in New York City highlighting extraordinary plant- based cuisine by Vegas chefs.
Using her intimate knowledge of the vegan dining scene in Las Vegas, Diana selected five chefs to head to NYC in July to prepare a special dinner highlighting the vegan cuisine in her hometown.
The Vegas Vegan Dinner became a regular event, and will resume once the Covid-19 pandemic is over.
LIFE IS BEAUTIFUL
In 2019, Life is Beautiful, Las Vegas’ largest music/food/arts festival partnered with Vegans, Baby for its new Farm Stand.
Curated by Diana, the Farm Stand featured a rotating line-up of chefs and restaurants creating vegan cuisine for the entire span of the three-day festival. It featured popular Strip and local chefs and restaurants.
More than 2,400 vegan dishes were sold in its first year.
